So that's 77% hydration? Perhaps I need to try some stronger flour as my dough would be very wet with that much water. The final proofed dough would stretch and tear too easily.

In the video you mentioned 150 g of sourdough starter but in the written recipe, it says 100 g🤷🏻‍♀️

Can this stay in the fridge for two days in case of inclement weather ❓ I made this dough this evening which by the way feels amazing, we want to bake it in our Ooni pizza oven tomorrow but the weather is iffy🤷🏻‍♀️

A very wet dough so be prepared to spend a bit of time & patience to work w/ it but once baked it's a lovely crust & leftover baked pizza refrigerates very nicely which makes it worth it.

I found that mine burned when I par-baked it in the oven so I skipped that step, and it still turned out beautifully!

Sourdough Pizza

500 g. flour

10 g. sea salt

375 g. water

150 g. 100% hydration sourdough starter


Mix all ingredients in a bowl, until it forms a shaggy dough.

Let rest for 30 minutes.

Stretch & fold.

Cover and let rest 30 minutes.

Perform four coil folds, 30 minutes apart.

Cover and put in fridge overnight.

In the morning, divide/weigh into 4 equal pieces.

Form into rounds in a floured, parchment lined baking sheet.

Let rise at room temp until puffy/risen.

Preheat oven to 500 degrees.

Top and bake 5-7 minutes or until browned on top.
