ОтветитьA very wet dough so be prepared to spend a bit of time & patience to work w/ it but once baked it's a lovely crust & leftover baked pizza refrigerates very nicely which makes it worth it.

I found that mine burned when I par-baked it in the oven so I skipped that step, and it still turned out beautifully!
Sourdough Pizza
500 g. flour
10 g. sea salt
375 g. water
150 g. 100% hydration sourdough starter
Mix all ingredients in a bowl, until it forms a shaggy dough.
Let rest for 30 minutes.
Stretch & fold.
Cover and let rest 30 minutes.
Perform four coil folds, 30 minutes apart.
Cover and put in fridge overnight.
In the morning, divide/weigh into 4 equal pieces.
Form into rounds in a floured, parchment lined baking sheet.
Let rise at room temp until puffy/risen.
Preheat oven to 500 degrees.
Top and bake 5-7 minutes or until browned on top.
