Ответить1) the most important tip was completely missed. Start with a good steak. Not the stuff you typically get in the US. Not that Wagu crud. But a well aged (>30 days) steak. If it's not well aged, then it's just inedible.
2) If you start with a good piece of meat then you don't need to deep fry it in all that butter. I want my steak to taste like beef, not butter and rosemary.
3) let the person eating the steak cut their own food. They're not babies, they can do for themselves.

ОтветитьDo NOT use your wrist in an attempt to guess the right doneness. Unless you've cooked literally thousands of steaks you''re gonna get it wrong. Use tools like an instant read thermometer and obviously let it rest.

ОтветитьI read somewhere something similar, yet different: heat the pan, place the steak in, leave it 2 minutes on the first side, 2 minutes on the other, then 1.5 (or 2) min on the first side, 1.5 (or 2) min on the other side, take the pan off, turn the steak over again on the first side, place a bit of butter on top, some herbs, cover it and leave it for 5 min to rest. The recommendation was also for a bit of good brandy on top, but I don't do it anymore. No salt, no oil, no thermometer, just a thin slice of butter at the end and maybe 2 leaves of chopped basil. My wife, daughter and 94 year old mother in law love the steak...
