The much more possible scenario can be missile exchange using conventional warheads in order to destroy each side s striking and reconnaissance capabilities. Along with elimination of both military and political leadership of both sides. That very likely will be massive strikes within European war theatre, as step one. In that case most critical will be how quick and effective US will retaliate back. If it will at all, that's remains to be seen by some experts estimate. If it will, then yes, next step is nuclear option, though again a lot will depend from current situation at that very moment and how both sides will communicate in order to deescalate. Because neither want to die in nuclear fire so to say. In that sense Europe is collateral damage, even with phase one war, it will be severely damaged, til horrible degree of destruction.
