if the peanut butter is so old and he wouldnt even consume it then the chemical composition must have changed in some way over time so how can i be using this peanut butter sample for calibrating my machines if what the document says whats inside of it only refers to what was in there when the peanut butter was made?

So if the daily values listed on food is based off the average diet samples, and those samples are updated regularly, even yearly, then the total percentages will always increase as a default. For argument, if a juice contains 40g of sugar and is listed as being 40% daily value, then the expected daily limit would be 100g of sugar. But if the average American decides "what's an extra 10% gonna hurt" and drinks extra then they've consumed 110%. Then the next sample update is taken and the average consumption is now 110g daily so they change the recommend dose. Now everyone is consuming more sugar because the label told them it was within 100% recommended value. If they over consume again it just gets higher and higher.

This is how generational obesity and diabetes happens. All it takes is a larger pool of over consumers than under consumers and the limit gets raised. Apply this to all dietary values, with the added estimations they use like not sampling every single type of fish, and what were left with is an inevitable decline in food quality. Even if the majority were health aware it would take just as long to revert as it did to develop, and that's assuming no other influences like cost.
