One thing the FlutterFire Auth UI's EmailProvider config doesn't do is email verification. You will have to implement that yourself.

there is no void call back to call the api in these buttons

and when i change the style of these provider buttons in the themeData it affects the entire app buttons

I don't know what to feel Johannes, I just spent weeks building a firebase auth system/ui from scratch only to find out there's a package out there that does all of this, I feel frustrated and glad at the same time.
