They are almost totally defined by government including its layout which is the same in every single one, minimum wages , prescribed codes, use of chemicals as prescribed by government. Supermarkets are the worst illustrations of statism as far as business go .Most restaurants are more anarchistic. Now something like a Costco is almost anarchistic, it requires consent to enter , it has its own standards and always tries to remove the chemicals among other things.
