ОтветитьWas looking at how wholemeal flour would work out for pizza then ended up amazed that nothing seems to stick to your hands. I can easily end up with nothing in the bowl, it's like the stuff loves being on me. Could oil my hands and it still sticks to them

ОтветитьWord to the wise if you want to mitigate the gluten problem. Let the dough rest for at least 24 hours. It allows the gluten to be properly metabolized by the yeast. I worked in a pizza place for four years. Dough was always in the fridge for 24 hours.

Dry ingredients:
3 cups whole wheat flour
1 tsp instant yeast (proof for 5 minutes if using active yeast)
¼ tsp salt
1 tsp brown sugar
Mix them well together
To dry ingredients, add:
2 tbsp cooking oil
1½ cup of warm water (add gradually)
Gently mix them till you finish the water and the dough comes together
Kneading part,
Add some flour to your work surface if its too sticky, knead for ±5 minutes
Then place the kneaded dough into oiled bowl, cover with damp cloth, and let it rest in warm place for 1 hour.
Hi, I cooked my pizza in my microwave oven. I cooked the pizza in the conventional mode at the temperature of 180C for 20 mins. But it is still not cooked properly from the middle area. What I'm doing wrong?
