But hey, don't knock the broiler. That's my go-to way of taste testing a fish. Just salt pepper paprika, couple dabs of butter and finish with lemon. If you want a little crisp, sprinkle some cornmeal on top.

Pro-tip: mix grated Parmesan with cornmeal for crispy topping 🤠
