2nd story dude just punked out. He should have sued the tow company for the illegal tow, as well as suing "Megan" for fraud and illegal use of his property, as well as getting "Gus" involved for the same against her. Easy criminal charges could have been filed as well. That was a mere slap on the wrist, not ProRevenge.

Story 1: The company was shady as f**k, but the OP was equally as shady and backstabbing. I'd rather hire the owner than that little driver puke. And the HUBRIS of OP makes me think that MAYBE the infractions weren't as "made up" as he's claiming. Not everybody in a cape is a hero.

If no one stayed and gave them 20 percent of their tips then they would have to close . Also no most people couldn't hang in there for less than minimum wage because they wouldn't be able to pay their bills

Labor laws are there for a reason and are even enforceable against government offices. I proved that when my boss told me my performance stats were going to be done by my immediate superior who couldn't do the job in the first place and only theere because he was passed on to every office and nobody wanted him. I calmly explained to him to rescind or else he would be talking to my lawyer. He went and talked his superiors and came back the day to tell to train that guy. I said no and he pulled out my job description where said I had to train. I read him the full sentence, I had to train lower coworkers. He tried later to lower my job performance and I refused to sign. He tried to push it and I still refused. He said he was going write up an insubordination against me. I said find and showed him my documentation of the last few interactions. They already signed off from my other supervisor that could write a review. He went away with his tail tucked betweenhis legs. On top of that I was the only female on crew and ran all survey inspections.

Must not live in what is misnamed a "Right to Work" states. I was advised by the state's Labor Board the company could do whatever they wanted. I asked her why she had a job, then, as her department was redundant.

shouldnt have payed for the tow, SHOULD have called the cops and simply demonstrated that it was towed illegally from HIS property and asked the guy behind the counter if GTA charges are worth the couple hundred bucks hes demanding… because it costs nothing to press charges

Bad employer ... My daughter worked for a fairly new chain of convenient stores. Mostly bought the old Alsups stores. This company tried to blame her for stealing a roll of lottery tickets $2per.. Week later lottery lady and store manager won big...I told her quit now and distance herself. Heard both quit too. Also she never received w2s from them. IRS cant find them and only number we have from the company is in Ukraine area.....

In the first story, the OP's suggestion about documenting everything is critical. When I served in the USN we were required to keep a small green notebook in our pockets ... it was considered part of the uniform. We were supposed to document anything that needed fixing or complex orders etc. 
Many of us kept a second one for ourselves to document problems that you might not want your chain of command to see until you were ready. That second notebook was called the "Pearl Harbor File" and it was used only when things turned bad and you needed some leverage. Notes would include illegal orders, actions, slurs (racist, sexist, etc.) instances of theft, corner-cutting, mistreatment, anything that went wrong and could give you a negotiating position when, inevitably, the fecal matter encountered a rotational air circulator.

Story two I'm not sure I'd paid the towing company. They've basically stolen OPs car since they towed it without permission of the property owner. Maybe even report them to who ever regulates Towing in that city and state

This reminds me of my first employer from decades ago that made us all sign a document saying we had received training and PPEs (gloves, goggles, and apron)

We received nothing of the sort. My guess is that the local manager was either stealing the funds or, more likely, just too lazy to order the stuff.

There's another, far more important lesson to be learned in story number one, and it's a TRULY moral/spiritual one and not the mere facade of righteousness. Living in a red, born-again hypocrite state that's chock full of two-faced, self-righteous fucking church mongers who ALSO own a shit ton of small businesses and/or income properties, I discovered from a very young age that these same "pious," holier-than-thou (and usually quite wealthy) bastards will rip each and every one of their employees off, screw them on wage/hour laws, flout County Health Department laws, etc., but it's the screwing over of the working class and working poor people that REALLY pisses me off!! Week after week, they sit in their Goddamned churches and sing their poisoned mind, hypocrite guts out in their damned church music, and yet, COMPLETELY IGNORE one of THE most GRIEVOUS SINS listed in their precious Holy Bible, and that is, that passage that ADMONISHES the practice of cheating workers out of their earned wages; it goes on to say that sins of this nature are "the very sins that cry out to Heaven for vengeance." They pretty much ALL ignore this and other very important parts and commandments in the Bible. When I was 12, back in the summer of 1978, we were poor and my dad was out of work and we were going to lose our house to foreclosure; as lowly and humble of a house as it was, it was all we had. So, my brothers and I got jobs, underage, of course, and I landed a job bussing tables in an "Amish-style" restaurant, and then later, washing dishes, and I worked very hard, taking the time to care about the quality of my work, and I was, of course, paid "under the table," as they often called it. I witnessed health department citations and violations, mostly due to filth and layers of years worth of thick grease, which I began to scrub and de-grease during every shift, little by little....until they eventually passed their inspections. Now, there were some who worked there who would swipe things after the owners left at night, like coffee, other food items, supplies, etc., and I knew who most of them were, even though stealing was just not something I would or could ever do; when it was eventually noticed, suspicion fell onto me because, after all, my family was out of work, on food assistance, and struggling, and in a tiny, dirty little town, this was no secret. After months of constant innuendoes of possible theft on my part I quit, but not before months of noting and recording each and every labor law violation and child labor law violations in particular, wage/hour and overtime violations, health code violations we were always being told to hide but under no circumstances to correct, etc. Oh, did I forget to mention they were an extended family of self-righteous, holier-than-thou Mennonites who NEVER missed a church service and looked down on those who were of a different religion or worse, non-religious, like we were?! Yep, they're almost....ALMOST....as bad as the greedy, wealthy Evangelicals! Scary, the way a little money corrupts so many. But, I digress. I reported everything I knew, and then I kept an eye on things via some of my now-former coworkers and I continually reported all of the current stuff as well....I made it my mission in life. After numerous citations, forced shut-downs by the health department, IRS audits, and horrific labor relations law violations, they were finally forced out of business forever, so they all had to drive their flashy new Cadillacs, Chrysler Imperials and Lincoln Continentals home for good. When someone, ANYONE, seems to have to always tell you about how good and honest and religious they are, RUN, DON'T WALK....IN THE OTHER DIRECTION, because they're nothing but crooks, thieves, liars and hypocrites!

I would have gone back on that tow company and sued the s*** out of them too. Just says you had to deal with a previous owner doesn't mean it carries over to the new owner. That was basically a stolen car

Story 1 : congratulation OP, you introduced the concept of Union Representative to that company XD it's pretty common in Belgium (and I think in Europe in general with a few tweaks here and there depending on the country). It's just that in Belgium, they are protected by labor law. You can't fire an official Union Representative

Ugh. Waaaaaay back when I worked very briefly as a pizza delivery driver. When I started the way I was told about tips and such was "You can either count out all of your tips at the end of the night and record the exact amount on one of these sheets. Or you can just sign off that you made the amount equal to this x averate. The tips will average out over time to be way more than what we are estimating, but you don't have to spend the time calculating the tip taxes every night or have to pay the higher taxes on all the tips." It didn't make much sense even back then, but I think our actual salary was at minimum wage at the time and tips were just that, tips. So it wasn't as bad as a waiter/waitress position where you are making a fraction of the minimum wage. It was a long time ago so I don't remember all the details, but even to a dumb kid it still seemed highly sketchy. I didn't work there long before I moved on. Not because it was a bad job, but it was parttime and I had moved from working multiple part time jobs to a full time job.
