We're remodeling our kitchen and all but gutting it. We had our countertop and cabinets removed. The contractor came in and just cut the backsplash out. If you remove the backsplash it damages the drywall and almost always needs to be replaced anyway. Cutting it out gives you a nice level joint to work with when replacing the drywall.
In this instance the pipes and wires behind the wall are already marked, but it's also a good opportunity to see what you might need to work around.
