I was lucky to try the Vieux Carre in Hotel Monteleon right after Tales. Really good but very boozy. It made me slow down that afternoon.

I know it’s typically served in an old fashioned glass with ice, but to me this drink is a lot closer to a Manhattan than an Old Fashioned. It is 2:1 spirit(s) to vermouth with a couple dashes of additional flavours. That’s pretty far from the Old Fashioned build of spirit, water, touch of sugar, and bitters. I also concur with everyone here regarding Peychaud’s bitters.

I typically do this drink up in a coupe, no ice in the glass, but diluted using a mixing glass... then equal parts 2 dashes of both peychauds and angostura.

How much does the dom benidicine influence the flavor? I don’t want to buy a $30+ bottle if I’m only using a dash of it and don’t really see it in most other drinks

That is probably not the right pronunciation of vieux - at least it's not the French pronunciation. On another note, do you have an episode planned on one of the strongest tiki drinks out there: the zombie? And if so, are you planning on making a few versions of it, because so many variations exist? I would love to see your take on the zombie!

One of my favorite drinks and so much fun to make. Not too worried about excluding Peychauds, it has plenty of ingredients already and due to that definitely allows for some preference in flavor profiles. I love the marriage of cognac and rye whiskey and this drink really inspired me to learn more about cognac and try more cocktails with 1:1 rye:cognac ratios, sazerac especially. Incredibly interesting drink and I love everything about it from making it to sipping it. Thanks again, your videos are wonderful.

Haha, loved reading the comments.. it’s not just me that’s cops grief when I stray from the ‘original’ recipe... I always seem to vary a drink slightly in my vids and people are quick to call me out too 😆 I think people seem to forget that you can’t easily edit an uploaded video from years ago! Nice one again!

I just bought Benedectine and I'll try this. Guess it's a goodnight cocktail given the amount of booze in it :D
Oh, btw - the drink name is pronounced as "vie-ew-car" (the r at the back of the throat)

Cognac can be a minefield if you don't know the spirit. I fit into that category. What would you recommend for this cocktail that wouldn't get lost but would also stand as a good sipping cognac.

Best cocktail I had all of last year and one of my best ever was Ago Perrone’s riff on the Vieux Carre, the Vieux Connaught, at the Connaught Bar in London.
