MY HEALTHY PALEO NACHOS RECIPE | Cook with Me

I hope you enjoy this cooking video! Let me know if you try these yummy healthy nachos yourself, the recipe is below :)

Ingredients (serves 3):
1 sweet potato
500g beef mince
1/2 red onion
2 tomatoes
1 corn cob
1 avocado
1 lime
Coriander
Cumin
Paprika
Rosemary

Method:
1. Pre-heat oven to 200°C and line oven tray
2. Peel and chop sweet potato, put on oven tray and drizzle over olive oil, some rosemary and salt
3. Put sweet potato in the oven for 20-30 minutes (or until cooked)
4. Brown the mince in a fry pan on medium heat, once browned add cumin and paprika to taste. Then turn down heat to low and let cook
5. Dice corn, red onion, tomatoes and coriander and add to a bowl. Then juice half the lime over and mix together
6. Add avocado to a bowl and mash with a fork, then juice other half of the lime over and add salt and pepper to taste
7. Once the sweet potato and mince are cooked serve all ingredients on to a plate and enjoy!
