A favorite!

In the entire length of time that I’ve enjoyed restaurant versions of Chinese food, I’ve never considered ordering Egg Fu Young. I guess that this is because it lacked the ‘name recognition’ of more appealing-sounding dishes where proteins are the star, like Almond Chichen, Beef & Broccoli, Sweet & Sour Pork, etc.

But I’m learning to cook with Tak in my wok at home at home now, and his FAST system has become ingrained in me, owing to its versatility in ingredient selection. And the simple version of Egg Fu Young is one that I’ll be serving up for my wife and myself very soon - I know we’ll love it!

I’ve seen some other recipe videos that emphasize using more oil to deep fry and create a crispier texture on the eggs than Tak does here, but I think that this illustrates the flexibility of his template-based cooking in terms of ingredients and techniques. I love the simplicity of this one - it ought to come together very quickly!
