Made starter, let sit 2 days, day 3 when I refreshed was a firm ball? Will see what day 4 brings, hoping its ok?

So my einkorn sourdough starter is doing great! My question is, many sourdoughs are pourable, mine is not, so when measuring do i use the it like it is? Do I water it down to make it pourable? I'm still refreshing everyday for 10 weeks now, have made a few sourdough recipes with einkorn flour, do i alway use this ratio? 10g-30g-60g?
My biggest confusion is using my unpourable starter in recipes where they are pouring theirs.

Help - I just received the starter. I have no scale for weighing. How do I use it with cuo, teaspoon, Tablespoon measurements? I dont want it to go bad and cant get a scale for awhile.

I really like your recipes and the clear explanation that comes with it. But unfortunately here in the Netherlands we cannot purchase all purpose einkorn flour. Only the whole wheat. But after the levain video, the whole grain numbers aren't mentioned anymore. So I'm kind of at a dead end....😢

HELP!!! 🆘
On day 3 , before the first refresh, I found my starter tripled in size , almost exploding inside the container and the smell wasn’t pleasant. Also I could see some water separating from the dough.
WHAT SHOULD I DO?????? THANK YOU

So you are selling sourdough starter. (yeast) Why dont you share how it is done instead of trying to make money out of it. Yes, it has been done in thousand years in Anatolia and I do it myself at home. Hey people, go write" eksi maya nasil yapilir" - (This is Turkish, it means 'how do you make sour yeast') in search and get it free sourdough yeast recipe.

I need some help if someone can answer to me i made a good sourdough starter and i dont want to make more bread if i put it in the refrigerator how many time it lasts there and second when i will take it from the refrigarator and feed it to make the next bread can i put it again at the fridge or i must use it all and make a new one?
