Today we're making the crunchiest, crispiest, most delicious dill pickled green beans. I always get an absolute ton of green beans from the garden, and canning dilly beans is a great way to preserve them for months to come. They taste like a dill pickle but with even more crunch, and they're super easy to can with a hot water bath canner.

Dilly Beans Recipe (4 quarts or 8 pints of green beans):

-4 lbs Green Beans
-12-16 heads of fresh dill
-8 cloves garlic
-Whole black peppercorns
-3/4 cup Kosher salt
-6 cups white vinegar (5% acidity)
-6 cups water
-1.5 teaspoon red pepper flakes
-Calcium chloride (pickle crisp) - optional

-Combine the vinegar, water, and red pepper flakes in a pot and bring to a boil
-Trim green beans. Pack jars with 3-4 heads of dill, 2 garlic cloves, 5-10 peppercorns, and green beans.
-Add 1/4 teaspoon calcium chloride for quarts, or 1/8 teaspoon for pints (optional).
-Ladle hot brine into jars, leaving 1/2 inch of headspace.
-Process in hot water bath for 10 minutes (quarts) or 5 minutes (pints) - adjusting for high altitude if needed.
