Stop using Olive Oil for high temp cooking. Ghee or beef tallow is healthier and doesn't change its molecular makeup at high temperatures the way oils do.

What’s for breakfast?

I would say before cutting the steak a even lower temp as you are going to be putting them back into the oven. So before slicing try and make sure the steak is rare instead of medium rare. Also a stronger sear but maybe cooking on a pan or a hotter plate would be desired.
