Angry Kirby: This is actually a more realistic depiction. Note that Kriby's general description is that he's a simple being who follows his moods/instincts. If Kirby is happy, he acts happy. If Kirby is trying to save the world, he's in a more serious mindset and may in fact be angry at the badguys. The yarn game being marketed as much more of goofy entry in the series, there's really no logic to making him more serious looking.
Bigger Kirby: While there are some size differences with characters, they have all been somewhat placed into an "equal footing" size range, vs a more realistic one. Micro Kirby would simply be no fun to play as, so his Smash appearance is given its current size. It takes some doing to become a good Kirby player, even at current size. Also, we know that Kirby can puff himself up, which may be why he's such a lightweight at his size.
Metaknight: Either another of Kirby's species, or perhaps a different species from the same origin. He is not actually an enemy of Kirby. He's an ally that has a rivalry of sorts, and does seem to be challenging Kirby to get Kirby to become stronger. Which, Kirby and others could mistake for hostility. As for why he hides: His species (be it also Kirby's or one that's of similar looks) suffers from a terminal case of "cute". His Metaknight persona and outfit allows him to shed this perception and be seen as a skilled warrior on his own merit, and generally taken more seriously than someone like Kirby. Think of him like a superhero. Remove his mask, and his secret identity is revealed, making him more vulnerable. And in this case, exposing him as Kirby level of cute puffball. That's a bit more like finding out that Batman is not Bruce Wayne, but an adorable puppy in a human suit.
