ОтветитьAlways score the skin first and salt it 10 mins before cooking, makes the skin super crispy and helps with rendering out the fat. And to be fair there was still unrendered fat on that duck!

ОтветитьDid not work for me. First of all the duck was swimming in fat after the first part. I don't know if I was supposed to drain it or not. He doesn't say but miraculously the pan has very little fat in it. I turned it over then back on the skin-side for the oven. After 8min took it out, swimming in fat again and the skin was mushy, not crispy. I suspect he drains all the fat but doesn't tell you about it...

Ответитьif it's 90% cooked on the skin and it's in the oven for 6-8mins @200C say 7mins, then the duck is in the pan on the skin for 63mins :)

ОтветитьI get my meat from a fantastic supplier, all outdoor raised animals. This recipe is perfect, it brought out the best of the delicious meat. (I have reduced the amount of meat I eat to almost half in order to be able to afford it.)

ОтветитьIf your pan has a plastic handle, drop it off at Goodwill and get a real pan that CAN go from the stove top to the oven.
