3 eggs,
100g of sugar,
boudoir cookies,
250g of mascarpone,
coffee,
rhum,
cocoa powder
separate the yolks froom the whites
Add the sugar and the mascarpone and whip until it whitens
whisk the egg whites
Gently add the whisked whites to the mix (GENTLY)
in the plate, put a layer of the boudoirs , cover everything
soak them with coffee and rhum (i'll let you be the judge of the rhum quantitites)
Ad one layer of the mix, cover everything
Make a second layer of boudoirs, soak it with coffee and rhum again
Cover with the rest of the mix
Put in the fridge for 24 hours
Before serving, add the cocoa powder on top
