Vegan Cheese Sauce / Dip Recipe

Are you Vegan? Do you miss having cheese?
Well in this Vegan Cheese Sauce Dip recipe I will show you how to make a wonderful and flavorful cheese sauce.
You can save it for later , up to 7 days in the fridge or freeze for later use.
You can use it with Nachos as a dip. You could use it for Mac and “cheese”. Or for any other times your dish will call for a cheese sauce.

Ingredients
Cauliflower - 1 head (4 cups florets)
Butternut squash 1 (4 cups cut in small squares)
Vegan/vegetable broth (4 cups)
2 tbsp Oil
5 Cloves of Garlic (slices)
1/2 Cup Nutritional Yeast
3/4 Cup Coconut Milk (full fat)
1 tsp paprika
Pinch Salt
Pinch Cayenne Pepper
Pinch Black Pepper

Directions
**Instapot Method
Add Cauliflower & Butternut Squash & Broth
Pressure cook on High for 4 min
*StoveTop Method
In a Large pot Boil the broth then add the Cauliflower & Butternut Squash and cook till tender

While cooking the above
set a pan on Med heat
When hot add the Oil or Water (see video)
Add the garlic and cook for 4-5min

—Directions continued— after 1st step (Reserve 1-1/2 cups of the broth)
Place Cauliflower & Squash into the blender
Add 1 cup of the broth
Add the cooked Garlic
Add the Nutritional Yeast
Add Coconut Milk (full fat - less liquid)
Then add paprika, salt , cayenne pepper and black pepper
Blend till combined and a nice smooth consistency.
Add broth or Yeast as needed to get your desired thickness.

*separate into portions, will keep in the fridge for 7 days or freezer for weeks.
