ОтветитьMarion, I live alone in London away from my family in the US, and through the lockdown, I've tried a few of your recipes, with each one being an absolute hit. I thought I hit the pinnacle whenI made your chicken piccata, but holy hell on fire, this dish was the best thing I have ever made. Like seriously, better than a take out / restaurant dish. At the start I almost wrote my meal off because the lemongrass I bought was very dry and I accidentally bought bone-in-skin-on chicken thighs (took ages to cut the meat away from the bone!) but I followed your steps to a tee and exactly as you said, by magic, I had this delicious, caramel-y chicken dish. I'm literally going to make my family taste this blindfolded next time I'm home and ask them to guess which restaurant it came from, only to reveal I made it. It is a 1,000 out of 10. Thank you!!

Ответитьi ate a few weeks ago at at Vietnamese resto and tried this dish, and when i went home i immidiately googled how to cook it and ended on this channel downloaded the vid and made chicken with lemon grass and wow just wow!

ОтветитьThe flavors in this dish are amazing! My only issue I had was that my lemongrass was very crunchy in the final dish. Did I not cook the aromatics long enough? Or did I need to peel the lemongrass further? (I peeled it to almost 1/2 -3/4 the size). Any thoughts?

ОтветитьLove your recipes. I travel to Asia more now retired, coming to Bkk in the next year. Do you do cooking classes there? Often a problem being single buying lots of ingredients for one dish, and trying not to waste what's left.

ОтветитьOne of the best way to cook Asian food is to get a 14" steel wok and a high BTU burner and place it next to the bbq grill in the back yard. You can cook the day's meal very fast because of the high heat content of the wok. One huge advantage of cooking outside is the smoke from cooking doesn't permeate throughout your house. You can stir fry or cook the most umami meal without worrying about how your kitchen smells afteward.

ОтветитьViet here in Cali, these Viet dishes taste way better if making at home since the restaurant try to save some $$ they will cut down on ingredients, etc. such as Beef stew, Pho, etc. There are some fine Viet restaurants in Beverly Hills, CA. The more authentic the more time it needs to cook and they should charge appropriate price instead provide a run down dishes.

ОтветитьThere's a local Vietnamese restaurant near me that makes a Lemongrass Chicken very similar to this. I'm pretty sure they're not using coconut water, and also the sauce ends up looking very runny and more oily. It's also very dark - like soy sauce in terms of color, but otherwise I think it would taste very similar to this recipe. If I don't use coconut water, what would you recommend to leave it runny but not over seasoned?

ОтветитьI love watching you cook Marion, from Masterchef days...you have a way of making our mouths water, and your commentary makes it all seem so easy! This dish turned out amazing...only thing I did different was to cook the chicken first till I got some browning, then added the onions etc. Waited on tenterhooks for the coconut water to boil down to stickiness. I have cooked so many of your recipes, and you never fail me! You are my favourite go-to chef!!

ОтветитьI make this quite often, as well as Thai basil chicken. As a diabetic, though, I just leave out the sugar, and it really does turn out fine. The fish sauce does smell unappetizing when added, but it cooks off nicely, leaving behind great flavor. When the fish sauce is added, I simply avoid "smelling" the dish until it has cooked off. Same with Chinese cooking wine....strong smell going in, but I know it's cooked off properly and brought flavors together when I can no longer smell it.

ОтветитьI remember my first bowl of 'tom yong goong'. I ate the kiffir lime leaves, the lemon grass stocks, and galangal roots and thought the Thais must have the digestive constitution of a billy goat. When i found out you just eat the shrimp and broth, i had to laugh at myself.
