ОтветитьFor a great homemade Indian chicken curry - try this recipe: you will never go back to any other one!
In a pan, add oil, 1tsp whole cumin, half tsp black whole pepper, half tsp whole cloves, 3 - r cardamom pods with shell, 1 cinnamon stick, 1 bay leaf. Let it fry till it’s aromatic. Then add 2 chopped onions, let it cook till translucent. Then add 2 crushed tomatoes. Let it cook down. Add 1 tsp ground fresh garlic 1 tsp ground fresh ginger. Again let it cook ( a lot of Indian cooking is letting the spices just cook for a while at each stage). Once you can no longer smell the garlic - add in the following powders - 1 tsp heaped ground coriander powder, 1/2 tsp ground cumin powder, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, 1/4 tsp black pepper powder and 1/2 tsp good quality garam masala powder. You can add 1/2 cup of water here and continue cooking if there’s no juice in the pan. You don’t want to burn anything.
Once all mixed and cooked and you see the oil coming on top of the mixture and it all looks like it’s almost become a paste - then you can add your chicken and potatoes. Let it cook. Chicken will naturally release its juices so you don’t need to add water at this stage.
Add salt to taste. And once the chicken is cooked and you see the water isn’t enough you add 1 cup or 2 cups depending on how you like your curry.
Once ready add a squeeze of lemon, and coriander leaves and serve with naan or rice or both.
Just a tip - turmeric powder itself will not give an Indian curry flavour. Because it’s meant to give a colour and add flavour with other spices. By itself it is bitter and bland. So always pair it with other spice powders.

ОтветитьYesss!!! You do not have to wash chicken. 5 star restaurants do not wash chicken or any cuts of meat.
But if they like vinegar or baking soda in their meat, It's whatever lol
A little tip: use tomato puree or simply grinded tomato instead of tomato sauce for the curry. Also, use less turneric because too much turmeric spoils the taste of the dish. You will also require red chilli powder and coriander powder for the curry.

ОтветитьIndian Chicken Curry has the same spices in two different forms. Whole and powdered.
For 2 pounds of chicken
Cumin Powder 1 teaspoon
Coriander Powder 2 teaspoon
Turmeric Powder 1/2 teaspoon
Red Chilli Powder 1/2 teaspoon
Garam Masala Powder 1 teaspoon
Garlic Paste 2 teaspoon
Ginger Paste 1 teaspoon
Salt 1 teaspoon
Enough water to cover all the pieces
Also add all those whole spices
Cook for 30 mins on medium heat

ОтветитьAs an indian this is great an quick chicken curry usually we eat roti and sometimes naan because roti is lighter then naan but let me tell you how to eat properly eat and serve take a plate and keep a bow and fillit with curry keep it on the plate and naan beside the bowl while eating take a small pice of naan which can fit in your mouth and the dip it in the curry (usually we take onions while eating) and a little bit of onion after the naan is finished at last take some rice as u want and pour the curry on the rice please try to eat like this i would be happy and i also have a request to try chicken biryani with raita if you want the recipe of raita i will share you we love you from india ❤🎉 you are so cute 🥰

ОтветитьAside from everything everyone advised, the more you fry the ingredients you added to the oil till it becomes brown (before adding chicken) , the more tastier plus you should fry the chicken more before adding water. It gives a great flavour similar to Indian restaurants
