ОтветитьSo right off the bat, you are admitting you aren't making proper garum, and you still made this whole vlog-style video about garum, then made an inferior version. Garum is fermented fish guts, if you don't ferment fish guts then why bother making it? Just call it an instructional video. This was a frustrating watch and slightly disingenuous to your viewers.

tunny probably refers to "little thunny"(false albacore) which are closer to mackerel size than the big tuna species, they max out at 30lb or so, usually 5-15lb

ОтветитьWe Khmers still make our fermentated fish products the ancient way. The salted fermented fish call "Braw-hok ."
Once the Braw-hok I'd at its maximum ripens stage it can be processed and refined into fish sauce.
Braw-hok is either processes into past or leave whole, or we can process it into fish sauce. Khmers households are still carrying on the traditional method of ancient times. Our Khmers version only used two ingredients, fish and salt.
We Khmers called it Braw-Hok ( for fish paste)
Tuk-Drai (for the refined/fish sauce).
With the right ratio of fish to salt will give you a desirable Umami for your taste receptors.
Vietnamese people love this fish sauce stuff
